There are several benefits to ordering a custom processed hog from Metzger Acres! Aside from knowing exactly where your meat comes from and how it was raised, you can also take advantage of a lower overall cost per pound and the ability to customize your bulk purchase exactly how you want!

HOW DOES THE PROCESS WORK?

To place a bulk order, we require a non-refundable down payment ahead of time to secure your order. This deposit is deducted from your total purchase price.

Down Payment required at time of order:

- Half Hog: $50
- Whole Hog: $100

On butcher day, we will transport the hogs to the butcher and get their “live weight”, which is shared with the butcher, along with the name you want on your order. After the hog is butchered, we will be notified of their “hanging weight”, or the weight of the carcass after slaughter. Your payment is then due to Metzger Acres in full based on the hog’s hanging weight.

Estimated weight breakdown:
- Live weight: approx. 250lbs
- Hanging weight: approx. 75% of live weight or approx. 187.5lbs
- Meat weight in your freezer: approx 50% of live weight or approx. 65% of hanging weight or approx. 125lbs

Your cost due to Metzger Acres is $3.00/lbs by hanging weight. By the example above, your cost would be $3.00/lbs x 187.5lbs = $562.50. This is the cost for the meat.

Your next step is to call the butcher to give your cut instructions. If you are unfamiliar with how hogs are custom cut, simply inform the butcher you would like them to run through all the cut options with you. You can customize your items by size (weight per roast), thickness (inches of pork chop), flavor (sausage), bone-in or deboned, items per package (2 or 4 chops per package), and if you want certain items smoked/cured. As they run through the cut list, they will list options for each item.

Butchering costs will vary based on the size of the hog and how you have it cut. For an average 250lbs hog, our typical butchering cost come to approx. $325. This is a separate payment you are responsible for, owed to the Butcher at time of pickup.
