Chicken Stew Hen/Rooster

A stew hen/rooster is a different breed of chicken from our traditional meat chickens. Stew hens/roosters tend to be a tougher bird specifically for cooking down low and slow to tenderized the meat. These birds are far less "meaty" than a traditional meat bird.
